Disclaimer: Technically this is only five days worth of dinners since we were gone Sunday evening fishing for hooligan and I didn’t have the idea for the blog post until Monday.
I got the idea to write down a week’s worth of dinners from a blogging friend, Shari Zook.
I randomly decided this would be the week to do it, even though my menus were already made and there was certainly nothing fancy on them.
We are trying to clean out the salmon in the freezer in preparation for this year’s fishing season, so if you see salmon on the menu a lot, it’s because it is becoming a common theme in our cabin these days.
Monday night’s dinner: Fresh caught King Salmon (a gift from our neighbor who always catches a fish first), homemade tartar sauce, spaghetti, mixed vegetables.
Tuesday night’s dinner: Bean and Rice burritos with lettuce from our own raised beds. (Definitely a highlight)
And for once we had dessert – coconut cream pie that I could not resist making when I realized I had all the ingredients it needed.
Wednesday night’s dinner: Salmon fingers, fried rice with vegetables.
Thursday night’s dinner: Pizza, green beans, orange peach smoothies.
I made this for something special, but then Andy didn’t even get home in time for supper and had to eat his later. Oh well. The rest of us enjoyed it hot and at the proper time at least.
Friday night’s dinner: will be – salmon rice casserole with peas and carrots.
Looks delicious! All that salmon! We’ve only very rarely had any as I- even tho it’s SO healthy- rarely can get past the price tag. We’ll just rejoice with you that at least your brains will be healthy with all that Omega 3:)
Thanks for the reminder that it’s good for us! We are so tired of salmon and just long for a good meal of chicken. Lol
