Eatables

We eat a lot of snacks around here. One in the mid morning, and one in the afternoon after quiet time. Half the time snack time sneaks up on me and before I know it the children are saying, “I’m hungry, Mom!” with annoying regularity. Then I have to be the adult and try to figure out what to feed everyone. If I haven’t done anything in advance, it seems we always end up eating the unhealthiest thing in the house (think cookies or fruity pebbles cereal), so recently I’ve been using this recipe to stay on top of snack time. My children love them and it’s a quick, easy, grab and go type snack. Win/win/win!

Protein Balls

4 cups oats

1 cup flaxseed

2 T chia seeds

1 cup dark chocolate chips or raisins

2 t vanilla 

1 cup honey

2 cups peanut butter

Mix everything together in a large mixing bowl. Using your wetted hands, roll mixture into balls. Refrigerate.

  1. Apples and pnb. Popcorn. Leftovers. They may crack their own hickory nuts whenever. This is in the winter. And in the summer they pick raspberries and blueberries and strawberries and blackberries and mulberries and tomatoes and turnips fresh from the farm. I want summer.
