Make Your Own Funnel Cakes

I have been craving fried food lately, particularly donuts, but I was out of white flour and with all our rushing around and fishing we hadn’t had time to go grocery shopping.

Then Andy didn’t have to work yesterday so we all drove the hour and a half to Walmart and stocked up. It sure was wonderful to have Andy’s help!

We didn’t get back until 4:30 pm and after putting all the groceries away and getting supper ready I STILL wanted to make donuts. Except they would take too long with giving them time to rise and cutting them out.

Suddenly in the middle of eating supper I had the solution! Funnel cakes!! They are easy to make and don’t take much time, and you still have the fried dough taste.

Andy was totally on board and even offered to wash the dishes and clean up the dirty little faces while I made them. I wasn’t going to say no to that!!

Here’s my recipe.

FUNNEL CAKES

2 cups white flour

1 T. sugar

1 t. baking powder

1/4 t. salt

2 eggs

1 1/2 cup milk

1/2 t. vanilla

Put everything in the blender and blend until well combined. You may need to add more milk as you will need the batter thick but pourable.

Heat oil in a skillet or fryer until it reaches 375. Put 3/4 cup of batter into a measuring cup, and while holding a funnel over the hot oil, carefully pour the batter in. Move the funnel first circularly and then crisscross to make your funnel cake. Fry until golden brown and then flip to fry the other side.

Using a tongs, lift the funnel cake out onto a plate and sprinkle with powdered sugar and cinnamon. Repeat with the rest of the batter.

Makes 5 funnel cakes.

  1. That’s a great idea. I do FRIED bread during the summer for a bit of a change from biscuits and rolls. Still use my QUICK Roll recipe (which actually has rolls done and in the oven in about an hour from start time) and then have lots to fill the fried bread with after you split them in half — salmon or halibut spread, PB&Honey or Jam, Nutella …… I always mention to the crew that they continue to grow a bit in your stomach so don’t eat until you are stuffed. (Thinking it is because you don’t let the dough rise before cooking — just roll out and cut — much like donuts) 🙂
