Every year since we’ve been married I’ve had fun making plates of assorted Christmas cookies to take around to our neighbors this time of year.
This year, however, I have neither the time nor the ridiculous amount of butter it takes to make six different kinds of cookies and candy, so I improvised. In half an hour I made a batch of fudge, put it in a big pan, then sliced it into bars the next day. Simple. Easy. Quick. And now we have something to take around to the neighborhood.
If you’re like me this year and just can’t find the time to make all those cookies, try this fudge! It’s scrumptious and is a real lifesaver time-wise.
Christmas Fudge
12 oz evaporated milk
2 T. butter
4 1/2 cups sugar
Dash salt
2 12 oz semi sweet chocolate chips
16 oz mini marshmallows
Bring the first four ingredients to a boil in a large pan. Simmer 6 minutes, stirring occasionally.
Remove from heat and add the chocolate chips and marshmallows. Stir until dissolved.
Line a 9 by 13 pan with parchment paper and pour the fudge in. Refrigerate until set, then cut into bars.
