I love Thanksgiving.
Growing up we always went to my Grandma’s house. There was a lot of good food and then a quiet afternoon visiting and playing games. Dad and my big brother Josiah always fell asleep, and at least one of my sisters were usually reading a book. We only have two cousins on Dad’s side of the family so get togethers mostly consisted of our family plus a couple people, but we were used to them being quiet. Cozy.
Thanksgiving is a lot more work now that I’m an adult because food doesn’t just appear to be eaten and raved over – it first has to be cooked. By me. But more and more I’ve come to enjoy the cooking as well as the eating and as each year passes I add to my tried and true recipes. This year I finally found a way to cook turkey without it drying out!
This is the recipe I used: Brine: 1 gallon water, 3\4 salt. Put frozen turkey in a 5 gallon pot and cover with brine (approximately 1 1/2 batches for a 12- 15 turkey. 2 batches for a lg. turkey)
Keep in a cool place 2 days and 2 nights.
Drain off brine and add 1 cup water to pot. Cook on low heat overnight or for 9 hours. Use meat thermometer to make sure it’s done.
When done, drain off broth and use to make gravy. Slice the turkey and serve or put in a pan to reheat.
We had a Thanksgiving meal at church on Sunday and I cooked a turkey for it overnight on Friday. When we woke up on Saturday morning the whole house smelled delicious and we kept picking at the turkey all day. I don’t know if I’ve ever had such soft moist turkey and it was so simple to make!
But more than the food, this time of year always makes me think of all the ways I am blessed. There are so many things to be thankful for! Here are some of mine –

A warm cozy cabin
A wonderful marriage
Salvation through Jesus!
The small things that make life enjoyable like coffee, a crackling fire, a good CD or butterfly kisses from the children.
