It has been fall here for about a month now, and the leaves have changed and it is getting colder out. Now we rarely go out without a jacket on and the last two days we’ve had a fire in the wood stove both morning and evening. The sandhill cranes have flown south as well as the geese. Around here everyone seems to be getting ready for winter and Andy has been busy hauling and splitting firewood.
There’s nothing like coming in from the chill and sitting down to a big bowl of soup. There’s something so comforting about it. But ltaast year I got a recipe from my sister in law that made soups even more cozy. Dumplings. No fuss, hardly any mess and you don’t have an extra pan to clean the way you do when you make biscuits. Just mix the batter up with a fork, drop it in blobs into the boiling soup and cover for ten minutes. I love one pot meals.
I know ya’ll are behind us weather-wise by at least a month and still have hot temps, but as you wait for fall weather here’s a recipe to add to that collection.
Dumplings
1 cup flour
2 t. baking powder
1/2 t. salt
1/4 t. mustard
2 T. oil
2/3 cup milk
Mix dry ingredients first, then add wet. Drop into boiling soup with a tablespoon. Cover and let steam 10 minutes.
