August is just around the corner and with it come guests!! Andy’s sister is getting married next week, so we are getting ready for a bunch of family who will be visiting.
Visits from family up here are about as rare as dinosaur eggs, so I’ve been trying to plan ahead so I don’t have to spend all my time cooking while they’re visiting.
I’ve got a couple casseroles in the freezer, one coffee cake, some cookies and best of all, a mocha dessert.
I love this mocha dessert because not only is it absolutely delicious (think frozen cheesecake) it’s also something you can make well in advance of an event and then just pull it out about half an hour before supper time. It looks like you’ve gone to a lot of trouble, when in reality all the work was done days ago.
Make Ahead Mocha Dessert
2 t. Instant coffee
1 T. hot water
1 cup (14-16 cookies) crushed Oreos
1/4 cup butter, melted
2 8-oz packages cream cheese, softened
1 14-oz can sweetened condensed milk
1/2 cup chocolate syrup
12 oz cool whip
In a small bowl, dissolve the coffee in the hot water. Set aside.
Mix the Oreos and butter and press into a 9 by 13 pan or container.
In a large mixing bowl use a hand held mixer to beat the cream cheese, condensed milk, chocolate syrup, and coffee mixture. Whip until well combined, then fold in 8 oz of the the cool whip.
Pour on top of the cookie crust and cover the top with the remaining cool whip. Garnish with extra Oreos and/or more chocolate syrup.
Cover with plastic wrap and store in your freezer until needed.
