I used to to be a good cook. I spent quite a bit of time planning menus, baking, and making ‘extras’.
But right now I just don’t have time to spend on meals, so we eat Very Simple Food.
There are a few meals that make me feel like a great cook even when I have spent almost zero time on them. These are my SlapDash recipes!
Warning – If you are a person who likes lists of ingredients, exact measuring amounts, etc., this recipe will probably only annoy you. I go more by what I have on hand than what a typical recipe should consist of.
SlapDash Breakfast Casserole
First, plop some pieces of bread in a pan like this. Any old bread works, even if it’s stale. (Or frozen! I’ve done it!)
Next, add some meat, ( I usually use sausage) chunked cheese, onions, vegetables, leftovers, ( This casserole is very versatile!) and whatever else you have on hand. The main thing is meat and cheese and you can improvise from there.
The casserole pictured is pretty skimpy since we had just gotten home after two days and didn’t have much in the fridge.
Mix some eggs and milk together, enough to almost cover the bread, cheese, and sausage.
Dump the eggs and milk on top and bake at 400 for around an hour.
That’s it! It really is that simple. Sure is a lifesaver on the mornings when Andy is fighting to get the balky generator running, the children wake up hungry and the phone is ringing off the hook. This is actually a pretty common scenario around here!
