Richard and Missy Person (Missy is my Dad’s cousin) are commercial fishers and have offered us free pink salmon!
The pinks are running now, so Tuesday morning we picked up 21 pink salmon from their son’s place, ate one for lunch, and packed the rest into quart jars. I did some with just salt, and some with a brine.
Two jars didn’t seal, so we had salmon salad sandwiches the next day.
It made 18 quart after 2 didn’t seal. Depending on the size of the fish, we could fit 2 fillets in each jar = 1 fish per jar.
Missy has offered to do it again either Saturday or next Monday. Thank you Richard and Missy! What a huge blessing this is!!
